Production Notes
The 2016 vintage presented issues of temperature variation during harvest. After beautiful 70 degree warmth in early spring, the flowers opened to the world for pollination, but were then met with two weeks of cold weather. This resulted in a reduced amount of grapes per cluster. Spring soon transitioned into a perfectly warm summer, and the combination of heat and the slightly lower crop level led us to pick this Block 4SB20 two weeks earlier than previous vintages. We began fermentation in stainless steel tanks to keep the temperatures as low as possible, and used Pichia as the primary fermenter. Pichia allows increased mouth feel and length to a very fresh, crisp wine. The wine was aged in stainless steel tanks for seven months and bottled in March 2017.
