Tasting Notes
The bouquet of this golden hued wine is filled with ripe melon and lychee fruit. Melon, lemon zest and lychee flavors continue on the palate and are layered with a creamy note from a partial malolactic fermentation. Bright acidity and a lively finish balance the viscosity that is so characteristic of our estate grown Viognier.
Production Notes
The wine was fermented cold in stainless steel tanks, with a portion fermented in 60 gallon stainless steel drums were allowed to conduct a 10-15% malolactic fermentation. There was no oak added at this point. Malic fermentation, which is the conversion of tart malic acid to a softer lactic acid, gives texture to the wine and allows it to fill out on the palate. Bottling was completed in April 2017.
Winemaker Notes
"Our Viognier provides a true and pure expression of the varietal from our estate vineyards. It begins crisp and ripe and fills out on the palate with beautiful texture. This wine is intended to be sipped slowly in order to allow the wine to evolve over a leisurely experience. For those of you who are patient enough to wait a year, a great reward will come from a little extra time in the bottle. I always enjoy hard cheese with this vibrant, aromatic wine."
